Cauliflower rice is a filling, low carb & low calorie alternative to regular rice. I get Green Giant frozen cauliflower rice, this one is the cauliflower medley (see below). The whole bag is 75 calories, and almost too filling to eat the whole thing (unless you are HUNGRY!).... Edamame brings 9g of protein for 1/2 cup (85g).

You can opt to use any type of chickpea pasta for this dish (such as banza penne pasta) instead of the chickpea orzo.
