Kath's Vanilla Protein Pancakes

Makes 4 pancakes - 2 servings! Have some now and save in the fridge for later, or share with someone.

Ingredients: 1 scoop vanilla protein powder, 1/2 Bob's Red Mill Paleo Flour, 1/2 tsp baking soda, 1 egg, 1/2 tsp vanilla, dash of salt, and water or milk of choice added until desired consistency, about 1/3-1/2 cup. Add blueberries or other fruit if desired.

Mix all ingredients together (except fruit), and pour into 4 small rounded pancakes on a sprayed and heated skillet. Before flipping, add fruit to the top of each, and then turn over. Cook until golden on both sides. Enjoy!
