A refreshing & healthy-ingredient-filled taco salad! You'll need:
- 1 lb lean ground beef (85%-90%)
- You can also opt for ground chicken or turkey alternatively
- 1 teaspoon garlic
- 3 cups cooked Spanish rice
- 6 cups romaine lettuce
- 3 cups chopped tomato
- 1 cup whole-kernel corn
- 1 can black beans
- 1/2 cup reduced fat cheddar cheese
- Any other desired veggies, such as onion or bell peppers, etc.
Cook ground beef with garlic until browned, and drain excess grease. Stir in the seasoned rice; if rice is un-seasoned, add 1 teaspoon each of chili powder and cumin, salt and pepper. Toss together veggies & beans, and top with beef and rice mixture. Add reduced-fat shredded cheddar on top.
Top with home-made dressing:
- 1/2 cup fat-free sour cream
- 2/3 cup picante sauce
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
