Great filling snack that takes a 5 minutes to make...Customize it however you like!
INGREDIENTS:
- 2 eggs
- 1 tablespoon water
- small, chopped veggies such as:
- baby spinach
- mushrooms
- cherry tomatoes
- bell peppers
- 1/4 cup reduced-fat shredded mozzarella cheese
DIRECTIONS:
- Coat an 8-ounce microwavable bowl/mug with spray oil.
- Combine all ingredients and mix together well.
- Microwave on high power for 30 seconds. Stir and then microwave until egg is almost set, 30 to 45 seconds longer.
Estimated 230 calories, 22g protein. You can modify by using just egg whites for a lower calorie count.
