Kath's Shrimp Sauté

Ingredients: 

  • 9-10 large shrimp (fresh or frozen)
  • 1 medium zucchini, sliced
  • 1 cup or so sliced mushrooms
  • 3 cups or so of fresh baby spinach 
  • Balsamic glaze or pure balsamic
  • Optional 1 tsp minced garlic

Directions: Use Spray oil on pan and heat. Add zucchini, mushrooms, & garlic and sautee until tender. Add desired amount of balsamic, then add in shrimp. Allow shrimp to cook until pink, then add spinach on top and cook until wilted. 

Makes about 2-3 servings!
