White Bean and Roasted Chicken Salad

A super simple & high protein salad!

Salad Ingredients:

  • 2 cups chopped (into medium-sized pieces) rotisserie chicken
  • 1 cup chopped tomato
  • 1/2 cup thin sliced onion (if desired)
  • 1/3 cup basil
  • 2 (16-ounce) cans of cannellini white beans (or similar) drained and rinsed

For the dressing (optional):

  • 1/4 cup red wine vinegar
  • 2 tablespoons EVOO
  • 2 teaspooons dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 minced garlic cloves

Directions:

Place all ingredients in a bowl and combine, gently tossing. To make dressing, combine all ingredients and stir with a wisk. Top your salad with dressing and you are good to go!

Makes 5 servings; Nutrition info per serving (including dressing): 369 calories; 10g fat; 29g protein; 41g carbs; 9.5g fiber.
