Greek Salad with Chickpea Orzo

You can opt to use any type of chickpea pasta for this dish (such as banza penne pasta) instead of the chickpea orzo.

[You can find chickpea orzo (or also called risoni) from my favorite brand of bean pastas, Explore Cuisine (see grocery list); Banza also makes it, and the Lidl supermarket has their own brand as well (though not always permanently stocked). RightRice brand also makes a chickpea rice (available on Thrive Market & FreshDirect). ]

Cook up one serving of pasta, and then add low-fat feta cheese, olives, tomatoes, chickpeas, basil & spinach! Toss with a little red wine vinegar & olive oil (I measure the oil to make sure I don't add too much!). 
With chickpea pasta & low-fat feta, you will get around 20g of protein per serving.
