Roasted Acorn Squash

Acorn squash is so easy to roast and has such a pleasant flavor! A perfect side dish.

Slice the squash in half and then cut each half into another 3-4 slices each. Scoop out the seeds and LIGHTLY coat the insides with olive oil. Season with whatever you like - salt, pepper, oregano, paprika, garlic powder, etc. and roast for 30-40 minutes or until edges brown. I like to roast or top with a little parmesan as well!

You can also go the "sweeter" route and roast with a little honey, cinnamon, and nutmeg. Acorn squash are versatile and taste amazing either way!
