A super simple & high protein salad!
Salad Ingredients:
- 2 cups chopped (into medium-sized pieces) rotisserie chicken
- 1 cup chopped tomato
- 1/2 cup thin sliced onion (if desired)
- 1/3 cup basil
- 2 (16-ounce) cans of cannellini white beans (or similar) drained and rinsed
For the dressing (optional):
- 1/4 cup red wine vinegar
- 2 tablespoons EVOO
- 2 teaspooons dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 minced garlic cloves
Directions:
Place all ingredients in a bowl and combine, gently tossing. To make dressing, combine all ingredients and stir with a wisk. Top your salad with dressing and you are good to go!
